Classic mushroom sauce

Ingredients for 4 servings:

  • 2 tbsp butter
  • 2 garlic cloves
  • 1 onion(s)
  • 500 g mushrooms
  • 250 ml vegetable stock
  • Paprika powder
  • 125 g sour cream, or single cream
  • salt and pepper
  • 2 tbsp lemon juice
  • 1 bunch of parsley

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Heat the butter. Peel and dice the garlic cloves. Peel and dice the onion. Sauté the garlic and onions in the butter. Clean, grate, and slice the mushrooms. Add them to the onions and garlic and fry for about 5 minutes. Season with paprika. Pour in the vegetable stock and reduce by half over high heat. Stir in the sour cream (or single cream) and season with salt, pepper, and lemon juice. Wash the parsley, shake dry, and finely chop. Stir half into the sauce and sprinkle the other half on top. This sauce goes particularly well with tagliatelle.
