Ingredients for 4 servings:
- 1 kg pork roast
- Salt and pepper, freshly ground
- 5 tbsp olive oil
- 2 garlic cloves, peeled
- 3 tbsp tomato paste
- 6 tbsp water
Instructions
Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 1 hour 45 minutes; Total time approx. 2 hours 10 minutes
Rinse the rolled roast under cold running water, pat dry with kitchen paper, and season thoroughly with salt and pepper. Heat the olive oil. Sear the rolled roast on all sides, then remove. Sauté the garlic cloves in the roasting fat. Add the tomato paste and water. Add the meat and simmer with the lid on for 1 hour 45 minutes. Turn the meat occasionally. Let the cooked rolled pork roast rest for 10 minutes, then slice. Arrange the slices on a warmed platter. For the gravy, top up the roasting juices with a little water if necessary and season again with salt. Pour the gravy over the meat or serve separately with the meat.
