Classic spinach curry (also vegetarian)

Ingredients for 2 servings:

  • 2 tbsp curry paste, green
  • 3 tbsp oil (peanut oil)
  • 800 g leaf spinach
  • 250 g potatoes
  • some salt
  • 1 tbsp sesame seeds
  • 3 tbsp peanuts

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour

Thaw the spinach, if necessary. Wash, peel, and dice the potatoes, then fry in the peanut oil. Add salt, sesame seeds, and peanuts. Drain the spinach, add it, and let it wilt. Cook over medium heat until the potatoes are cooked through. This also works well with pre-cooked potatoes (e.g., from the day before). Stir in the curry paste and let everything stand for another 5 minutes. Season to taste. Serve with basmati rice (and, for those who prefer meat, chicken or duck breast fillet).
