Cocoa-almond cookies

Ingredients for 1 servings:

  • 100 g sugar
  • 250 g butter
  • 40 g cocoa, approx. 4 heaped tbsp
  • 2 tsp baking powder
  • 150 g wholemeal flour
  • 100 g wheat flour
  • 2 packets of vanilla sugar
  • some cinnamon
  • 200 g almonds, grated
  • 4 egg yolks for brushing
  • 100 g almond flakes for sprinkling

Instructions

Working time approx. 1 hour; Rest time approx. 2 hours; Cooking/baking time approx. 20 minutes; Total time approx. 3 hours 20 minutes

Christmas cookies

Cream the sugar, butter, and cocoa powder in a bowl until fluffy. Then mix with the baking powder, then add the flour, vanilla sugar, cinnamon, and ground almonds. Knead the dough thoroughly and let it rest in the refrigerator for a while. Line a baking sheet with baking paper, then form the dough into balls and place them on the baking paper. Brush with egg yolk and scatter the almond flakes on top. Bake in a preheated oven at 160°C (top/bottom heat) or 135°C (fan oven) for about 20 minutes.
