Coconut and Oat Slices

The perfect coconut and oat slices recipe with a picture and simple step-by-step instructions.

For the dough

  • 4 piece Eggs (or 4 teaspoons mixed with chia seeds + 200ml water)
  • 200 ml Sugar
  • 2 Pinches Salt
  • 200 ml Neutral oil
  • 250 ml Oatmeal
  • 200 ml Coconut flakes
  • 200 ml Buckwheat flour
  • 1 Sachets Baking powder
  • 200 ml Milk

For the cream

  • 150 g Cream cheese
  • 70 g Powdered sugar
  • 60 g Coconut flakes
  • 2 tbsp Lemon juice

The dough

  1. ATTENTION !! Note the dimensions.
  2. Eggs (or egg substitutes) frothy with sugar and salt
  3. Gradually run in the oil in a thin stream.
  4. Mix the oat flakes, coconut flakes, buckwheat flour and baking powder and work into the dough alternately with the milk.
  5. The dough is quite runny, so it has to rest a little so that the flakes can soak up the liquid. So let it rest for about 15 minutes, stir again and spread on a buttered tray or on a baking tray.
  6. Bake at 160 ° fan oven (180 ° O / U heat) for about 20 minutes. Let cool on the baking sheet, cut in half and remove from the baking sheet.

The creme

  1. Mix all ingredients well and let steep for about 15 minutes. The coconut flakes soak up the liquid and so the cream hardens

Complete

  1. Spread the cream on one half of the dough and place the other half on top.
  2. If you like, add a little powdered sugar on top. Cut into pieces and enjoy.
