Coconut-Chocolate Coins

Ingredients for 1 servings:

  • 250 g butter
  • 100 g sugar
  • 100 g flour
  • 100 g desiccated coconut
  • 1 ½ packs of pudding powder, coconut flavor
  • 50 g chocolate drops (chunks), white
  • some lemon zest

Instructions

Working time approx. 40 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 20 minutes

In a bowl, mix the softened butter with sugar, flour, pudding powder, and grated lemon zest until a dough forms. Wrap the dough in aluminum foil and chill in the refrigerator for about 30 minutes. Line a baking tray with baking paper and preheat the oven to 200°C (top/bottom heat). Shape the dough into balls and press two chocolate chunks into the center of each. Then roll each in desiccated coconut. Spread the balls out on the baking tray, leaving plenty of space between them, as they will spread slightly during baking. Bake in the hot oven for 10 minutes, then let cool completely until firm enough to hold.
