Coconut macaroons with chocolate

Ingredients for 1 servings:

  • 3 egg whites
  • 200 g sugar
  • 1 packet of vanilla sugar
  • 250 g desiccated coconut
  • 100 g dark chocolate
  • 1 tbsp flour

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Toast the desiccated coconut in a non-stick pan without oil until golden brown. Remove and let cool. Grate the chocolate using a grater. Beat the egg whites in a bowl until stiff peaks form. Gradually add the sugar and vanilla sugar. Mix the desiccated coconut, chocolate, and flour and carefully fold into the beaten egg whites. Using two tablespoons, form the mixture into small mounds and place them on a baking sheet lined with baking paper. Bake in a preheated oven at 125°C (convection oven) for about 25 minutes. Remove the macarons from the baking sheet and let cool. The macarons should still be soft in the center, as they will dry out as they cool.
