Coconut Pancakes
The perfect coconut pancakes recipe with a picture and simple step-by-step instructions.
- 100 g Desiccated coconut
- 100 g Flour
- 2 Teaspoon (level) Baking powder
- 250 Milliliters Coconut milk
- 1 piece Egg
- 1 tablespoon Maple syrup
- Peanut oil
- 150 g Sugar
- 4 piece Organic limes
- Mix the coconut flakes, flour, baking powder, egg, maple syrup and coconut milk into a smooth dough and let it rest for 15 minutes.
- In the meantime, bring 150 milliliters of water to a boil and dissolve the sugar in it. Add the juice of the 4 limes and the zest of the zest from one lime and simmer for 10 minutes. Then take it off the stove and let it cool down.
- Heat the oil in a pan and bake small golden-brown pancakes from the batter.
- Serve the whole thing with the lime syrup. Mango wedges go well with it or, if you like it more substantial, some cream or vanilla ice cream
