Ingredients for 4 servings:
- 750 g pumpkin(s)
- 500 ml vegetable stock
- 1 clove(s) garlic
- 1 piece(s) ginger, as desired
- 1 apple
- 1 can coconut milk
- curry powder
- Spice mix (paprika spice)
- salt and pepper
- turmeric
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
with apple
Core the pumpkin (peel if necessary) and apple and cut into pieces. Slice the garlic and ginger. Sauté everything together and then deglaze with vegetable stock. Simmer for about 20 minutes, then puree. Add the coconut milk and season with spices.
