Ingredients for 4 servings:
- 4 cod fillets, approx. 200 g each
- 4 tbsp olive oil
- 100 ml white wine
- salt and pepper
- 60 g stale bread rolls
- 1 bunch of parsley
- 4 sage leaves
- 1 sprig(s) rosemary
- 1 lemon(s), zest
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Mix the white wine with 2 tablespoons of olive oil and season with pepper. Place the bread rolls, herbs, lemon zest, salt, pepper, and 2 tablespoons of olive oil in a blender and coarsely chop. Coat the fish fillets on both sides with the mixture and place them on a baking sheet lined with parchment paper. Drizzle with the white wine mixture. Bake in an oven preheated to 180°C for about 15 minutes, until the fish is golden brown. Serve with potatoes and salad.
