Cod fillets with apple yogurt

Ingredients for 4 servings:

  • 800 g cod fillet(s)
  • 1 apple, red
  • 400 g yogurt, 1.5% fat
  • 800 g potatoes
  • 1 onion(s)
  • 1 bunch of dill
  • ½ bunch parsley
  • ½ bunch chives
  • 2 tbsp oil
  • 2 tbsp apple cider vinegar
  • salt and pepper
  • Sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Peel and wash the potatoes and boil for about 20 minutes. Peel and dice the onion. Wash the herbs, shake off any excess water, and chop them, setting aside a small portion for garnish. Peel and quarter the apple and remove the core. Dice the apple and drizzle with vinegar. Mix the yogurt with the apple pieces, herbs, diced onion, and spices and refrigerate. Wash the cod fillets, pat dry, and season with salt and pepper. Heat the oil and fry the fillets on both sides for about 4 minutes. Drain the potatoes and serve with the fish and yogurt sauce. Garnish with the remaining herbs.
