Cod in tomato cream

Ingredients for 3 servings:

  • 800 g cod fillet(s)
  • 2 tbsp lemon juice
  • Salt
  • 500 g tomatoes
  • 1 bunch of basil
  • 200 g cream
  • White pepper, freshly ground
  • Butter, for the mold

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

(also called cod in the Baltic Sea)

Preheat oven to 200°C (400°F), grease a shallow, ovenproof dish with a little butter. Rinse the cod fillets in cold water, pat dry, and drizzle evenly with lemon juice. Salt the fillets and place them side by side in the dish. Finely dice the tomatoes. Wash the basil and pick off the leaves. Mix the tomatoes and basil with the cream and season with salt and pepper. Pour the tomato cream evenly over the cod. Cook the fish uncovered in the oven (center, fan oven 180°C (350°F)) for 15 minutes. Serve with rice or potatoes.
