Ingredients for 2 servings:
- 2 Sharon fruits
- ½ small onion(s), red
- e.g. chili pepper(s) without seeds
- 1 tsp, heaped mint leaves, fresh
- ½ lime(s), the juice
- some lime juice, additional for the fish
- ½ tsp ginger, peeled, grated
- salt and pepper
- 1 tbsp extra virgin olive oil
- 2 cod fillets (back fillets)
- some oil for frying
Instructions
Working time approx. 15 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 34 minutes
Peel the Sharon fruits, remove the stems, and dice the flesh. Finely slice the mint leaves. Finely dice the onion. Very finely dice the chili pepper. For the dressing, combine the lime juice with the ginger, salt, and pepper, and whisk in the oil. Mix the dressing with the fruit and onion cubes, chili cubes, and mint. Let it stand for about 15 minutes, and season to taste. Rinse the fish, pat dry, and cook in a pan in heated oil for about 3-4 minutes. Drizzle with a little lime juice and season with salt and pepper.
