Cod Soup with Dill >>

- 175 g Cod
- 2 tbsp Aniseed schnapps, e.g. ouzo
- Salt
- White milled pepper
- 2 Shallots
- 200 g Potatoes
- 1 tsp Butter
- 400 ml Fish stock
- Fresh dill
- Rinse the fish, dry it and cut into narrow strips. Remove all bones if possible. Season with aniseed schnapps, salt and pepper and cover and chill. Let it steep for about 30 minutes.
- Peel shallots and finely dice. Also peel the potatoes and cut into cubes. Heat the butter in a saucepan, sauté the shallots in it until translucent and sauté the potatoes briefly. Then deglaze with the fish stock. Cover everything and simmer over a mild heat for about 20 minutes.
- When the potatoes are soft, puree everything with the mixer and briefly bring to the boil again. Add half of the dill, finely chopped, to the soup with the cod. Let the fish soak for about 3-4 minutes – do not cook anymore! If the fish stays in for too long, it will be dry and tough!
- Season the soup again, place on preheated plates and sprinkle with the dill.
