Cod with mustard sauce

Ingredients for 4 servings:

  • 4 portions of cod fillet(s)
  • lemon juice
  • salt and pepper
  • 150 ml white wine, dry
  • 1 bunch parsley, flat
  • 50 g butter
  • 2 tbsp mustard, medium hot
  • Butter for the mold

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 200°C fan/convection oven. Wash the fish in cold water, pat dry, drizzle with lemon juice, and season with salt and pepper. Grease a baking dish with butter, pour in half of the white wine, and place the fish in it. Cover with aluminum foil and sauté the fish in the oven for 12-15 minutes. Wash and finely chop the parsley. Melt the butter and mix with the mustard, the remaining white wine, and a squeeze of lemon juice. Bring to a boil and season to taste. Arrange the fish fillets on plates and drizzle with the mustard sauce. Serve with rice or potatoes and a green salad.
