Cold dishes: Summery pea soup
A summary pea soup can be eaten both warm and cold. You need the following ingredients: 350 grams of peas, 2 tablespoons of cream cheese, 4 sprigs of mint, 400 milliliters of vegetable stock, salt, and pepper.
- Boil the peas in the vegetable stock for ten minutes. If you’re using fresh peas, you’ll need to cook them a little longer to soften them.
- Mash the peas with a hand blender. Stir in the cream cheese and season the soup with salt and pepper. Add some chili if you like.
- Put the soup in the fridge. Serve them along with the mint leaves.
Guacamole as a cold spread
For an avocado spread, you need 3 ripe avocados, 1 small onion, 3 cloves of garlic, 3 small tomatoes, and the juice of half a lemon, pepper, and salt.
- Halve the avocado and scoop out the flesh. Mash the pulp into a paste.
- Clean and dice the onion and garlic. Wash the tomatoes and cut them into small pieces as well. Give everything to the avocado.
- Season the paste with salt and pepper. Add the lemon juice. Mix well.
frozen yogurt
For a simple frozen yogurt, you need the following ingredients: 250 grams of the fruit of your choice, 50 grams of cream cheese, 100 grams of natural yogurt, and some agave syrup or honey to sweeten.
- Wash the fruit. Roll it. Chill it for an hour.
- Then put the fruit in a bowl and puree it. Add the rest of the ingredients.
- Put the frozen yogurt in the freezer. Take it out a few times to give it a good stir. How long the yogurt stays in the freezer is entirely up to you. If you want it to be set, keep it in the freezer for at least 3 to 4 hours.
