Cold dishes: Summery pea soup

A summary pea soup can be eaten both warm and cold. You need the following ingredients: 350 grams of peas, 2 tablespoons of cream cheese, 4 sprigs of mint, 400 milliliters of vegetable stock, salt, and pepper.

  1. Boil the peas in the vegetable stock for ten minutes. If you’re using fresh peas, you’ll need to cook them a little longer to soften them.
  2. Mash the peas with a hand blender. Stir in the cream cheese and season the soup with salt and pepper. Add some chili if you like.
  3. Put the soup in the fridge. Serve them along with the mint leaves.

Guacamole as a cold spread

For an avocado spread, you need 3 ripe avocados, 1 small onion, 3 cloves of garlic, 3 small tomatoes, and the juice of half a lemon, pepper, and salt.

  1. Halve the avocado and scoop out the flesh. Mash the pulp into a paste.
  2. Clean and dice the onion and garlic. Wash the tomatoes and cut them into small pieces as well. Give everything to the avocado.
  3. Season the paste with salt and pepper. Add the lemon juice. Mix well.

frozen yogurt

For a simple frozen yogurt, you need the following ingredients: 250 grams of the fruit of your choice, 50 grams of cream cheese, 100 grams of natural yogurt, and some agave syrup or honey to sweeten.

  1. Wash the fruit. Roll it. Chill it for an hour.
  2. Then put the fruit in a bowl and puree it. Add the rest of the ingredients.
  3. Put the frozen yogurt in the freezer. Take it out a few times to give it a good stir. How long the yogurt stays in the freezer is entirely up to you. If you want it to be set, keep it in the freezer for at least 3 to 4 hours.
