The perfect cold tomato soup >> recipe with a picture and simple step-by-step instructions.

  • 1 Shallot
  • 1 Clove of garlic
  • 2 tbsp Extra virgin olive oil
  • 5 Party tomatoes
  • 1 Can Pizza tomatoes – 425g
  • Salt
  • Black pepper from the mill
  • Cayenne pepper
  • 150 ml Red wine lovely
  • 2 tbsp Red wine vinegar
  • 2 Discs Toasted bread or croutons
  • Chives fresh
  • Fresh tarragon
  • Olive herb
  • Extra virgin olive oil
  1. Peel and finely chop shallot and garlic. Heat a tablespoon of oil in a pan and lightly sweat the shallot and garlic. Remove the pan from the heat and let it cool down.
  2. Put the pizza tomatoes, finely chopped party tomatoes, red wine, red wine vinegar and the shallot mixture in a blender and mix well. Season with salt, pepper and cayenne. Soup in the refrigerator for 2 hours.
  3. In the meantime, dice the toast and fry in the remaining oil. I took ready-made croutons that I roasted again. Wash the herbs, shake dry and cut into small pieces.
  4. To serve, place the soup on a plate, add another small dash of olive oil, sprinkle with croutons and herbs and enjoy.
