Cold Tomato Soup >>
The perfect cold tomato soup >> recipe with a picture and simple step-by-step instructions.
- 1 Shallot
- 1 Clove of garlic
- 2 tbsp Extra virgin olive oil
- 5 Party tomatoes
- 1 Can Pizza tomatoes – 425g
- Salt
- Black pepper from the mill
- Cayenne pepper
- 150 ml Red wine lovely
- 2 tbsp Red wine vinegar
- 2 Discs Toasted bread or croutons
- Chives fresh
- Fresh tarragon
- Olive herb
- Extra virgin olive oil
- Peel and finely chop shallot and garlic. Heat a tablespoon of oil in a pan and lightly sweat the shallot and garlic. Remove the pan from the heat and let it cool down.
- Put the pizza tomatoes, finely chopped party tomatoes, red wine, red wine vinegar and the shallot mixture in a blender and mix well. Season with salt, pepper and cayenne. Soup in the refrigerator for 2 hours.
- In the meantime, dice the toast and fry in the remaining oil. I took ready-made croutons that I roasted again. Wash the herbs, shake dry and cut into small pieces.
- To serve, place the soup on a plate, add another small dash of olive oil, sprinkle with croutons and herbs and enjoy.
