Cold udon noodles with soy sauce dip

Ingredients for 1 servings:

  • 1 pack of udon noodles, approx. 200 g
  • 1 tsp soup seasoning (Maggi)
  • 1 tbsp soy sauce
  • 1 tsp, leveled dashi or vegetable broth
  • 1 tsp mirin
  • 1 piece(s) cucumber(s)
  • lovage
  • tarragon
  • chili powder

Place the udon noodles in a microwave dish, pour over a little water, cover, and cook for 3 minutes at 700 watts. In a cup, mix together water, Maggi, soy sauce, dashi, and mirin, adding an ice cube if necessary to chill it. Stir the udon noodles until fluffy. Drain and refresh with cold water until cool, then place in cold or ice water. Slice the cucumber. Place the udon noodles on a plate and sprinkle with chili. Serve garnished with cucumber slices, tarragon, and lovage. The dip can either be poured over the noodles or the noodles can be dipped in it. Carrots, bamboo shoots, spring onions, and anything else your heart desires also go well with this dip.
