Ingredients for 4 servings:
- 1 tbsp sunflower oil
- 6 tbsp soy sauce
- 1 garlic clove(s)
- some chili powder
- 1 ½ tbsp peanut butter
- 2 tbsp honey
- 1 ½ tbsp lime juice
- 250 g soba noodles
- ½ cucumber(s)
- 2 spring onions
- 100g edamame
- 1 tbsp peanut oil
- some sesame seeds for sprinkling
- e.g. salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

For the sauce, combine the sunflower oil, soy sauce, garlic, chili powder, peanut butter, honey, and lime juice in a bowl and blend thoroughly with a hand blender. Add salt and pepper to taste. Cook the soba noodles according to the package instructions. For the topping, slice the cucumber and spring onions. Quarter or halve the cucumbers, depending on your preference. Briefly fry the edamame in a pan with hot peanut oil. Once the noodles are done, transfer them to a serving bowl and toss with the sauce. Top with the prepared vegetables and serve. Sprinkle with sesame seeds, if desired.
