Ingredients for 4 servings:
- 700 g carrot(s), mixed
- 1 tbsp rosemary needles, fresh, chopped
- 2 tbsp olive oil
- 4 slices of soft goat cheese from the roll
- 1 tsp honey
- 1 tsp thyme leaves, fresh
- 2 tbsp parsley, chopped
- Sea salt and black pepper, freshly ground
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Preheat the oven to 200 degrees Celsius (top/bottom heat). Line a baking sheet with parchment paper. Wash the carrots thoroughly and halve or third them lengthwise, depending on their thickness. Toss with salt, rosemary, and olive oil, spread on the baking sheet, and bake for about 20 minutes, turning once. Sprinkle the soft goat cheese with the thyme leaves and drizzle with honey. Place on the baking sheet for about 3 minutes so the cheese warms up and melts slightly. Arrange the carrots in a fan shape, season with pepper, and sprinkle with parsley. Place a slice of goat cheese on top of each vegetable. Serve with toasted baguette or ciabatta.
