Colorful lentil stew

Ingredients for 2 servings:

  • 1 large onion(s), red
  • 1 large onion(s), white
  • 150 g purple potatoes
  • 1 cup(s) lentils, red
  • 3 cups water
  • Salt
  • 1 tbsp vegetable broth
  • 1 pinch(s) pepper, mixed
  • 1 pinch of caraway seeds
  • 1 pinch of marjoram
  • 1 pinch(s) of oregano
  • 1 pinch of chili powder
  • some olive oil for frying or sunflower oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Boil the purple potatoes with their skins on with a pinch of salt for 20 minutes, then let them cool slightly. Peel and finely chop the onions. Sauté the onions in a saucepan with a little olive or sunflower oil over medium heat for a few minutes. Now add the red lentils and bring to a boil with the water. While the lentils and onions are cooking, peel and finely chop the potatoes, and add them to the pan. Turn off the heat and season the stew with salt, pepper, and spices. Enjoy!
