Ingredients for 4 servings:
- 200 g pasta (penne or other)
- 2 class can/n corn, (Texas mix)
- 400 g minced meat, mixed
- 3 tbsp oil
- 1 onion(s)
- 1 garlic clove(s)
- 3 tbsp tomato paste
- 200 ml vegetable stock
- 150 g sour cream
- 4 sprigs of parsley
- Salt
- Cayenne pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes
with minced meat
Cook the pasta in salted water for about 6 minutes. Rinse and drain the corn. Fry the minced meat in hot oil for about 5 minutes. Chop the onion and garlic, fry, and season. Sauté 2 tablespoons of tomato paste, add the broth, and bring to a boil. Rinse the pasta and add it to the sauce along with the corn. Chop the parsley and fold in. Mix the sour cream with 1 tablespoon of tomato paste and season. Serve as a dip on the pasta dish.
