Colorful Onion Tart

Ingredients
 

dough

  • 150 g Flour
  • 1 Egg
  • 1 pinch Salt
  • 70 g Cold butter
  • Nutmeg

Covering

  • 3 Onions
  • 2 Garlic cloves
  • 1 Carrot
  • 1 Leek
  • 50 g Streaky bacon, finely diced
  • 75 g Wild boar salami, thinly sliced
  • Salt
  • Pepper
  • Espelette pepper
  • Oil

  • 1 cups Sour cream
  • 2 Eggs
  • Salt
  • Pepper

Instructions

  • Put the flour with the salt and some grated nutmeg in a bowl, make a well in the middle, beat the egg in there and distribute the butter in small cubes on the edge and then work it quickly with your hands into a smooth dough Wrap the dough in cling film and let it rest for an hour in the refrigerator.

Covering

  • Cut the onions into cubes and the garlic into slices. Halve the carrot and cut into fine slices. Halve the leek and then wash it well (fan it) and then halve the halves again and cut the leek into strips.
  • Heat some oil in a pan and fry the onions and garlic until translucent over medium heat, then add the carrots, they are steamed for about 2 minutes and then the leeks are added, which are also steamed for 2 minutes.
  • Now clear the center of the pan and put the bacon and wild boar salami in there. Stir everything for another 2 minutes, then place in a bowl, season well with salt, pepper and Espelette pepper and let cool down a little.

  • Beat the sour cream with the two eggs until smooth and season with pepper and salt, not too hard.

Assembly and finish

  • Preheat the oven to 190 degrees. Roll out the dough thinly between two cut freezer bags, pull off the top freezer bag and place the tart pan upside down on it and cut the dough with a seam allowance of 1 cm.
  • Now turn the tart pan with the dough over and pull off the other freezer bag, now the dough slides into the pan as if by itself. Prick the dough several times with a fork. Now distribute the topping well on the tart and pour over the top. Bake the tart on the middle rack for about 45 - 50 minutes.
