Ingredients for 4 servings:
- 250 g whole-wheat pasta, e.g. penne, spiral pasta, etc.
- 1 beefsteak tomato(s)
- 0.33 cucumber(s)
- 3 carrots
- 2 tbsp lemon juice or vinegar
- 3 tbsp oil
- 1 tsp mustard
- e.g. salt and pepper
- n. B. Herbs, fresh or dried
- 300 g cottage cheese
Instructions
Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 5 minutes

Cook the whole-wheat pasta according to the package instructions and let cool. Meanwhile, core and dice the tomato. Peel and dice the cucumber. Peel and grate the carrots. For the dressing, combine the lemon juice or vinegar with the oil, mustard, salt, pepper, and herbs. Toss the cooked pasta with the dressing, tomato, cucumber, and carrots. Finally, serve with the cottage cheese.
