Colorful pasta salad with pineapple

Ingredients for 4 servings:

  • 250 g pasta (spiral pasta)
  • 250 g sausages (spicy soy sausages)
  • 5 gherkins
  • 7 cherry tomatoes
  • 1 small can of pineapple (rings)
  • 300 g peas, frozen
  • 150 g natural yogurt
  • 1 small jar of Miracle Whip
  • 2 tbsp lemon juice, some pineapple juice
  • 3 tsp curry powder
  • salt and pepper
  • 1 onion(s)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the pasta until al dente and rinse. Pour the hot pasta water over the peas. Slice the soy sausage, dice the gherkins and onion, and cut the pineapple into small pieces. Quarter the tomatoes. Now add the pasta and the chopped ingredients to a large bowl, drain the peas, and add them to the salad. For the sauce, combine the yogurt with the Miracle Whip, pineapple juice, and lemon juice, and add the seasoning. Season to taste and let stand for a while.
