Potato – leek – sausage – casserole

Ingredients for 2 servings:

  • 8 jacket potatoes
  • 3 stalk(s) leeks
  • 350 g sausage (soy meat sausage)
  • 2 beefsteak tomatoes
  • 1 cup of cream or 1/4 liter of milk
  • 1 can of tomato paste
  • salt and pepper
  • 100 g cheese (Gouda), grated
  • 50 g Parmesan, freshly grated
  • 1 bunch of parsley
  • marjoram

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the potatoes, cut into thick slices, and place in a baking dish. Sprinkle some Parmesan cheese over them. Cut the tomatoes into thick slices and place them on top of the potatoes. Season with salt, pepper, marjoram, and finely chopped parsley. Slice the soy sausage and arrange it on top of the tomatoes. Slice the leek and fry it in a pan with a little olive oil, then arrange it on top of the tomatoes. Sprinkle with more parsley. Whisk the cream with the tomato paste, season, and pour over the casserole. Mix the remaining Parmesan with the Gouda cheese and the remaining parsley, spreading it evenly on top. Place a lid or aluminum foil over the casserole and bake everything in the oven preheated to 200 degrees Celsius (fan). Then remove the lid and let the cheese brown.
