Colorful peppers in tomatoes and garlic

Ingredients for 6 servings:

  • 6 tbsp olive oil
  • 6 bell peppers, two each in red, yellow and green
  • 1 tbsp parsley, chopped
  • 2 tsp garlic, crushed
  • 1 can tomato(s) (Pizza tomatoes)
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Simple tapa, very easy to prepare

Wash and trim the peppers, and cut them into very thin strips. Heat the oil and fry the pepper strips for 2-3 minutes, stirring frequently. Stir in the parsley and garlic and fry for a few more minutes. Add the pizza tomatoes, season with salt and pepper. Cover the pan and simmer over low heat for 20 minutes. Season to taste. Can be eaten warm or, better yet, left to marinate the next day. Serve at room temperature.
