Ingredients for 4 servings:

  • 5 large potatoes
  • 1 head of broccoli
  • 4 large carrots
  • 50 g butter
  • 1 onion(s)
  • 100 g ham, diced
  • 4 tbsp flour
  • 250 ml broth
  • 300 ml milk
  • 1 cup of crème fraîche or sour cream
  • some salt and pepper
  • Garlic
  • Parsley
  • salt water

Peel the potatoes and carrots and cut into slices about 2 mm thick. Halve or quarter the potatoes beforehand if necessary. Wash the broccoli and cut into small florets. Cook the potatoes and carrots together in salted water for about 10 minutes, then add the broccoli florets and cook for another 5 minutes, until everything is al dente. Drain through a sieve. In the meantime, peel the onion and dice it. Sauté in the butter with the ham until translucent. Stir in the flour and deglaze with the stock and milk, and simmer for about 10 minutes. Stir in the crème fraîche and season to taste. Mix everything together carefully.
