Colorful potato salad

Ingredients for 8 servings:

  • 1 kg potatoes
  • 2 apples
  • 3 tomatoes
  • 4 gherkins
  • 4 tbsp salad cream
  • 4 tbsp vegetable broth
  • 1 tsp horseradish, grated
  • 1 tsp, heaped mustard, medium hot
  • 4 tbsp vinegar (e.g. tarragon vinegar)
  • 2 eggs, hard boiled
  • 1 bunch of parsley
  • salt and pepper
  • n. B. sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 20 minutes

Wash, boil, peel, and slice the potatoes. Pour the vegetable stock over the potatoes and mix briefly. Core and peel the apples and tomatoes. Cut them into small cubes along with the gherkins and eggs and add them. Finely chop the parsley and add them. Mix the salad dressing with the horseradish, mustard, vinegar, and spices, pour over the potatoes, and let it sit in the refrigerator for a few hours.
