Ingredients for 4 servings:
- 380 g rice noodles
- 3 tomatoes
- 2 bell peppers
- 1 bunch of spring onions
- 360 g feta cheese
- salt and pepper
- e.g. olive oil

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cook rice noodles according to the instructions in salted water with a drizzle of olive oil. Trim and dice the bell peppers. Sauté in a large pan over medium heat. Dice the tomatoes and add them. Wash and finely chop the spring onions, and add them. When the rice noodles are cooked, drain and add them to the pan, stirring to combine. Season to taste. Dice the feta, add it, and stir. Turn off the heat while you do this. Serve when the feta has melted.
