Ingredients for 4 servings:

  • 1 head of iceberg lettuce
  • 1 can kidney beans
  • ½ can corn
  • 1 carrot(s)
  • 2 packs of ready-made salad dressing mix
  • Oil for the dressing
  • 1 pack of bread(s) (croutons with soy kernels and walnuts)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash the iceberg lettuce and chop or tear the leaves into pieces. Discard the outer, dark leaves. Place the kidney beans and corn in a sieve and rinse with cold water. The water flow shouldn’t be too strong, as otherwise foam will quickly form on the beans and disappear slowly. Grate the carrot, add it to a bowl with the other ingredients, and mix well. Add the croutons just before serving to prevent them from becoming soft. Very refreshing with meat main courses, but also on its own.
