Colorful sausage salad with Gouda and tomato dressing

Ingredients for 1 servings:

  • 500 g meat sausage (Lyoner)
  • 200g Gouda
  • 2 onions, red
  • 1 small bell pepper(s), red
  • 1 small bell pepper(s), yellow
  • ½ cucumber(s)
  • 1 small can of corn
  • 1 bunch of parsley
  • 5 tbsp tomato ketchup
  • 2 tbsp mustard, medium hot
  • Salt
  • pepper, black
  • Cayenne pepper
  • 5 tbsp white wine vinegar
  • 8 tbsp meat broth
  • 4 tbsp oil

Instructions

Working time approx. 25 minutes; Rest time approx. 30 minutes; Total time approx. 55 minutes

Cut the Lyoner into thin slices, then into fine strips. Cut the Gouda into strips. Peel, quarter, and thinly slice the onions. Quarter the cucumber lengthwise and cut it into 1/2 cm pieces (without peeling). Drain the corn. Finely chop the parsley. Dice the bell peppers. Mix all ingredients in a bowl. For the dressing, combine the ketchup, mustard, vinegar, broth, and oil. Season to taste with salt, pepper, and cayenne pepper. Pour the dressing over the salad, mix gently, and let it sit for at least 30 minutes.
