Colorful Vegetable Turret with Avocado Mustard Dressing

- 1 piece Carrot
- 1 piece Beetroot (cooked)
- 1 piece Apple
- 1 Handful Sunflower seeds
- 1 tbsp Cress
- 1 piece Zucchini (medium)
- 1 piece Ripe avocado
- 1 tsp Mustard
- 0,25 tsp Salt
- 1 pinch Pepper
- 1 pinch Chayenne pepper
- 2 tsp Lemon juice
- 0,5 piece Juice of half an orange
- 1 tsp Sugar
- Put the avocado meat with mustard, salt, pepper, cayenne pepper, lemon juice, orange juice and sugar in a tall container and puree finely. Finely grate the carrot, zucchini and beetroot and divide them into 3 small bowls. This works best with a food processor, but of course with a fine hand grater. Distribute the dressing among the 3 types of vegetables and stir well. Finely dice the apple and fold it under the beetroot. Roast the sunflower seeds in a pan without fat for 2 minutes. Arrange the vegetables on plates and sprinkle with sunflower seeds and cress.
