Colorful Vegetable Turret with Avocado Mustard Dressing

The perfect colorful vegetable turret with avocado mustard dressing recipe with a picture and simple step-by-step instructions.

  • 1 piece Carrot
  • 1 piece Beetroot (cooked)
  • 1 piece Apple
  • 1 Handful Sunflower seeds
  • 1 tbsp Cress
  • 1 piece Zucchini (medium)
  • 1 piece Ripe avocado
  • 1 tsp Mustard
  • 0,25 tsp Salt
  • 1 pinch Pepper
  • 1 pinch Chayenne pepper
  • 2 tsp Lemon juice
  • 0,5 piece Juice of half an orange
  • 1 tsp Sugar
  1. Put the avocado meat with mustard, salt, pepper, cayenne pepper, lemon juice, orange juice and sugar in a tall container and puree finely. Finely grate the carrot, zucchini and beetroot and divide them into 3 small bowls. This works best with a food processor, but of course with a fine hand grater. Distribute the dressing among the 3 types of vegetables and stir well. Finely dice the apple and fold it under the beetroot. Roast the sunflower seeds in a pan without fat for 2 minutes. Arrange the vegetables on plates and sprinkle with sunflower seeds and cress.
