Salads: Colorful Meat Loaf Salad with Orange and Mustard Dressing

The perfect salads: colorful meat loaf salad with orange and mustard dressing recipe with a picture and simple step-by-step instructions.

For the dressing:

  • 2 Spring onions
  • 6 Radish
  • 0,5 Peppers yellow
  • 1 smaller Apple
  • 200 g Mountain cheese in one piece
  • 1 tbsp Lemon juice
  • 2 tbsp 8-Kräuter-Mischung tiefgefroren
  • 3 tbsp Vegetable oil
  • 2 tbsp White wine vinegar
  • 1 tbsp Orange juice
  • 1 tsp Honey liquid
  • 1,5 tsp Orange mustard
  • 1 tsp Mango chutney
  • 0,5 tsp Salt
  • 4 turns Colorful pepper from the mill
  • 0,5 tsp Orange pepper
  • 0,5 tsp Sweet paprika powder

To garnish:

  • 2 tbsp Fresh chives rolls
  1. Cut the meat loaf into bite-sized strips. Peel and halve shallots, cut into thin rings. Wash and clean the remaining vegetables, peel the carrot. Cut the spring onions into thin rings, halve the radishes and cut into thin slices. Cut the peppers into thin strips. Coarsely grate the carrot. Put all ingredients in a bowl.
  2. Peel the apple and cut out the core, dice the pulp just like the mountain cheese. Add both to the other ingredients and immediately drizzle the lemon juice over the apple. Add the herbs and roughly stir everything through once.
  3. For the dressing, mix well the oil, vinegar, orange juice, honey, orange mustard, mango chutney and spices, season again to taste and pour over the salad. Mix everything thoroughly. Let it steep for 3-4 hours.
  4. To serve, arrange the salad in portions on plates and garnish with the chives. Have fun trying it out and enjoy your meal.
  5. Tip 5: For those who don’t like Leberkäse, simply use other cold cuts instead, e.g. Mortadella, Jagdwurst, beer ham or meat sausage. Everyone as he wants.
