Colorful vegetarian pearl barley with peppers, peas and tomatoes

Ingredients for 2 servings:

  • 200 g pearl barley and/or wheat
  • 2 onions
  • 3 bell peppers, red and yellow
  • 5 large tomatoes, fresh
  • 1 cup peas, frozen
  • salt and pepper
  • possibly chili powder
  • 500 ml water, for the pearl barley
  • 600 ml salt water, for the vegetables

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Simmer the pearl barley in the water until tender. This will take at least 15 minutes. You may need to add more water during the cooking time. After cooking, rinse the pearl barley in a sieve with cold water. Peel and dice the onions. Wash, halve, deseed, and dice the peppers. Wash the tomatoes, remove the stems, and dice the flesh. Simmer the vegetables and peas in salted water for 10 minutes until tender. Combine the pearl barley and vegetables and season with spices. This mixed barley mixture is perfect as a vegetarian main course or as a side dish.
