Confit garlic and herb prawns

Ingredients for 4 servings:

  • 500 g prawn(s), peeled raw
  • 5 garlic cloves
  • 4 sprigs lemon thyme
  • 2 sprigs rosemary
  • 400 ml olive oil, mild
  • 2 tbsp black peppercorns, crushed in a mortar
  • 3 tsp sea salt
  • 1 small dried chili pepper(s), optional

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Ideal in the Kenwood Cooking Chef

Peel the garlic, slice it thinly, and add it to the mixing bowl with the herb sprigs and olive oil. Crush the pepper and mix in the sea salt. Set the temperature to 55°C (131°F) and heat the oil with the herbs. Rinse the shrimp with cold water, pat dry, and add it to the warm oil. Confit for 20-30 minutes (the size of the shrimp determines the cooking time). Serve the shrimp with the herb oil. Don’t forget a baguette for mopping up the aromatic oil.
