Cooked fish with apple sauce Schleswig-Holstein style

Ingredients for 2 servings:

  • 500 g cod or cod
  • 3 tomatoes
  • 1 onion(s)
  • ½ lemon(s)
  • Salt
  • 1 tsp, heaped tomato paste
  • 1 tbsp, heaped butter
  • 1 tbsp, heaped flour
  • some apple juice

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Portion the fish (approx. 250g each), season with salt, and place in a casserole dish. Quarter the tomatoes, slice the onions, and squeeze the lemon juice. Add everything to the casserole dish along with a cup of water. Preheat the oven to 200°C. Place the casserole dish, lid on, in the hot oven and cook for 20 minutes. Then strain the stock through a sieve and set aside. Melt the butter in a small saucepan and make a roux with the flour. Then deglaze with the reserved stock and apple juice (to taste), and season with salt. Serve the fish in the casserole dish, with the apple sauce in a saucepan on the side. Boiled potatoes go very well with this dish.
