Cooked ham with asparagus and Dutch sauce à la Gabi

Ingredients for 2 servings:

  • 400 g cooked ham, sliced
  • 500 g asparagus, fresh or frozen
  • 375 ml water
  • 1 tsp salt
  • some sugar
  • 50 g butter
  • 50 ml cream
  • ½ tsp lemon juice
  • 2 egg yolks, whisked
  • ½ tsp mustard, medium hot
  • ½ tsp, leveled salt
  • ½ tsp sugar

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes

Arrange the ham on 2 dinner plates. Peel the asparagus from top to bottom (no need for frozen asparagus), making sure to remove all the skins but not damage the heads. Trim the bottom ends straight and cut all the stalks to as equal length as possible (removing any woody parts!). Wash the asparagus (no need for frozen asparagus), add it to the briskly boiling, salted, and sugared water, bring back to a boil, and cook over low heat for about 30 minutes until soft. Carefully remove the asparagus with a slotted spoon and place it on the ham. Meanwhile, melt the butter! Combine all the other ingredients in a mixer and heat through. Then gradually stir in the melted butter, continue heating, and stir until the sauce is smooth. Season to taste and drizzle over the asparagus.
