Cookie Monster chocolate muffins

Ingredients for 1 servings:

  • 200 g sugar
  • 125 g butter, soft
  • 1 packet of vanilla sugar
  • 3 eggs
  • 1 packet of baking powder
  • 300 g flour
  • 150 ml milk
  • 150 g chocolate drops
  • 125 g marzipan raw material or 150 g fondant
  • 200 g powdered sugar
  • 100 g desiccated coconut
  • Food coloring, blue
  • 6 Oreo cookies
  • some baking cocoa

Instructions

Working time approx. 1 hour; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 50 minutes

Preheat the oven to 180°C (top/bottom heat) or 160°C (fan oven). Place the paper baking cups into the holes of a muffin tin. Cream the softened butter, sugar, vanilla sugar, and eggs until fluffy. Stir in the milk. Mix the flour with the baking powder and gradually stir in until a smooth batter forms. Set aside 24 chocolate chips and stir the remaining chips and cocoa powder into the batter. Divide the batter into the muffin tins. Bake in the hot oven on the middle rack for 20-25 minutes. Remove from the oven, let rest briefly in the tin, then let the muffins cool completely on a wire rack. For the eyes, knead the marzipan mixture with 75g of powdered sugar and roll into 24 small, round balls. Press the reserved chocolate chips into the marzipan eyes to create pupils. Tip: If you don’t like marzipan, you can also use decorative fondant. You only need a tiny bit of powdered sugar. Put the desiccated coconut in a bowl and color it with a little blue food coloring. It’s best to wear kitchen gloves for this. Then spread the desiccated coconut on a baking sheet lined with baking paper and let it dry. Then transfer it back to a bowl. Carefully halve the Oreo cookies with a sharp knife. Mix the remaining powdered sugar, blue food coloring, and a little water to make a thick glaze. Brush the tops of the muffins with this (reserve a little for the eyes) and dip the muffins upside down into the blue desiccated coconut. Carefully cut a slit in each muffin with a sharp knife and insert 1/2 Oreo into the slit. Use a little icing to stick the eyes onto the muffins and let everything dry. Tip: Prepare the desiccated coconut and the eyes the day before so they have time to dry. Makes 12 cookies.
