Cookies: Chocolate Stubs

- 200 g Butter at room temperature
- 2 piece Oranges fresh
- 100 g Block chocolate
- 1 pinch Salt
- 100 g Powdered sugar
- 2 piece Your trusted chicken egg yolks
- 80 g Ground almonds
- 300 g Wheat flour type 550

- Stir the butter at room temperature until frothy. It should increase in volume.
- Crush the chocolate and melt it in a water bath.
- Now add the egg yolks one after the other to the butter, then the icing sugar spoon by spoon, then the ground almonds and the salt and stir well.
- Squeeze the oranges and add the juice to the batter along with the melted chocolate.
- Weigh the flour and work it into a smooth dough. In the absence of a meat grinder with a cookie cutter attachment, I filled the dough in a piping bag with the largest nozzle.
- Spray small sausages onto a tray lined with foil or baking paper and bake them for about 25 minutes at 160 degrees Celsius.
- After cooling, dip the ends in melted couverture and sprinkle with sugar sprinkles.
