Corn Fritters

Ingredients for 4 servings:

  • 3 corn cobs
  • 2 eggs
  • Salt
  • pepper
  • 1 pinch(s) of sugar
  • Nutmeg, freshly ground
  • 4 tbsp flour
  • 2 tbsp clarified butter
  • possibly bell pepper(s), red or green

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Remove any leaves and strings from the corn cobs, wash thoroughly, and scrape the kernels from the cobs (canned corn will also work as a substitute). Roughly chop the kernels and place them in a bowl. Separate the eggs, add the yolks to the corn, and beat the egg whites until stiff. Season the corn with salt, pepper, sugar, and nutmeg. Add the flour and mix well, then fold in the beaten egg whites. Pour the clarified butter into a pan, use a tablespoon to spoon batter into the pan, and fry until golden brown on both sides. For aesthetic and flavor reasons, I like to add diced red or green bell peppers.
