Ingredients for 1 servings:
- 200 g corn flour, fine
- 100 g flour
- 3 tsp baking powder
- 70 g coconut oil or butter
- 3 tbsp honey or maple syrup
- 480 ml almond milk (almond drink)
- 2 tsp lemon juice
- ½ tsp salt

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes
American cornbread
Preheat the oven to 180°C (top/bottom heat). Grease a baking pan with a diameter of approximately 22 cm. Melt the coconut oil and let it cool. Mix the almond milk with the lemon juice and let it stand briefly. Combine all the dry ingredients, then add the wet ingredients and mix everything into a smooth batter. Pour the batter into the prepared baking pan and bake in the preheated oven on the middle rack for approximately 30-35 minutes until golden brown. The cornbread tastes simply delicious even lukewarm. Freshly baked, the cornbread is absolutely delicious for breakfast or anytime. It is delicious cut into cubes and spread with a little butter and jam. For a slightly sweeter version of the cornbread, use a tablespoon more honey and, if desired, stir in a few blueberries before baking.
