Ingredients for 1 servings:
- 200 g cottage cheese
- 1 bunch of chives
- 1 apple, sweet
- ½ lemon(s)
- 1 bell pepper(s), red or yellow
- salt and pepper
Instructions

low fat – quick recipe – refreshingly delicious
Finely chop the chives, bell pepper, and apple and mix everything together with the cottage cheese. Season with lemon juice, salt, and pepper. Let it marinate, if desired. I often prepare this the night before for the office. Double the batch, but this recipe also makes a great party salad. Very refreshing in the summer!
