Cottage Cheese Fruit Cake

The perfect cottage cheese fruit cake recipe with a picture and simple step-by-step instructions.

For the dough:

  • 100 g Butter
  • 100 g Sugar
  • 1 packet Vanilla sugar
  • 1 pinch Salt
  • 2 Eggs
  • 100 g Flour
  • 1 tsp Baking powder

For the filling:

  • 3 Egg yolk
  • 100 g Sugar
  • 1 packet Vanilla sugar
  • 3 tbsp Food starch
  • 500 g Quark
  • 200 g Sour cream
  • 3 Protein
  • 1 pinch Salt

For covering:

  • 1 Can Fruit cocktail
  • 1 packet Glaze
  • 2 tbsp Sugar
  • 250 ml Canned fruit juice

For the dough:

  1. Put the butter, sugar, vanilla sugar and salt in a mixing bowl and stir.
  2. Add the eggs and stir in.
  3. Mix flour and baking powder, sieve, add and stir.
  4. Put the batter in a springform pan.

For the filling:

  1. Place egg yolks, sugar and vanilla sugar in a bowl and stir.
  2. Add cornstarch and stir.
  3. Add quark and sour cream and stir in.
  4. Beat the egg white with a pinch of salt until stiff and fold in.
  5. Put the filling on the dough and smooth it out.
  6. Bake at 180 degrees top and bottom heat for about 45 minutes.

For covering:

  1. Let the cake cool down.
  2. Drain the fruit well and distribute it on the curd mixture.
  3. Prepare the cake topping with sugar and the fruit juice from the tin and pour onto the cake.
