Cottage Cheese Fruit Cake
The perfect cottage cheese fruit cake recipe with a picture and simple step-by-step instructions.
For the dough:
- 100 g Butter
- 100 g Sugar
- 1 packet Vanilla sugar
- 1 pinch Salt
- 2 Eggs
- 100 g Flour
- 1 tsp Baking powder
For the filling:
- 3 Egg yolk
- 100 g Sugar
- 1 packet Vanilla sugar
- 3 tbsp Food starch
- 500 g Quark
- 200 g Sour cream
- 3 Protein
- 1 pinch Salt
For covering:
- 1 Can Fruit cocktail
- 1 packet Glaze
- 2 tbsp Sugar
- 250 ml Canned fruit juice
For the dough:
- Put the butter, sugar, vanilla sugar and salt in a mixing bowl and stir.
- Add the eggs and stir in.
- Mix flour and baking powder, sieve, add and stir.
- Put the batter in a springform pan.
For the filling:
- Place egg yolks, sugar and vanilla sugar in a bowl and stir.
- Add cornstarch and stir.
- Add quark and sour cream and stir in.
- Beat the egg white with a pinch of salt until stiff and fold in.
- Put the filling on the dough and smooth it out.
- Bake at 180 degrees top and bottom heat for about 45 minutes.
For covering:
- Let the cake cool down.
- Drain the fruit well and distribute it on the curd mixture.
- Prepare the cake topping with sugar and the fruit juice from the tin and pour onto the cake.
