Ingredients for 1 servings:

  • 1 cup cottage cheese
  • ½ bell pepper(s), any color
  • 1 small cucumber(s)
  • 1 small can of corn
  • 1 beefsteak tomato(s)
  • salt and pepper
  • 1 tsp parsley, flat

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Chop the vegetables and mix well in a bowl with the cottage cheese and corn, season, and you’re done! I like to serve this with crispy, oven-baked flatbread. I find it very refreshing, delicious, and not at all fattening!
