Country vegetable soup

Ingredients for 4 servings:

  • 1 bunch of chives
  • 1 bunch parsley, flat
  • some celery leaves
  • 4 m.-sized carrot(s)
  • 1 slice(s) celery (small slice)
  • 1 large kohlrabi
  • 1 handful of bush beans
  • 6 m.-sized potatoes
  • 8 Vienna sausages
  • salt and pepper
  • nutmeg
  • Thyme
  • basil
  • some mashed potato powder

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Finely chop the chives, parsley, and celery leaves. Add them to a pot of boiling water. Wash, trim, or peel the carrots, celery, kohlrabi, beans, and potatoes, and cut them into roughly equal-sized cubes. Add the carrots and celery to the pot and simmer for about 10 minutes. Then add the beans and kohlrabi. Simmer for another 5-10 minutes. Then add the potatoes. Finely chop the Vienna sausages and season the soup with salt, pepper, nutmeg, thyme, and basil. When the potatoes are tender, thicken the soup with a little mashed potato. Add the Vienna sausages. Wait until the sausages are warm and then serve. Serve with any bread you like.
