Ingredients for 3 servings:

  • 500 g couscous
  • 1 tsp oil
  • 1 cup of water, warm
  • 1 pinch of salt
  • 1 liter of water

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Basic recipe, Tunisian

Place the couscous (not instant!) in a large bowl, add salt, oil, and the cup of warm water. Mix everything well and let it rest for 15 minutes. Then mix thoroughly with your hands, breaking up any lumps between your fingers. Bring water to a boil in a saucepan with a sieve insert, add the couscous to the sieve, and let it steam for 45 minutes. Return the couscous to the bowl, stir thoroughly, let it cool, break up any lumps, and return it to the sieve. Steam for another 45 minutes, then the couscous is ready to serve.
