Couscous balls with walnuts

Ingredients for 1 servings:

  • 500 g couscous, raw
  • 1 tube(s) Tomato paste
  • 10 walnut kernels
  • 1 onion(s), red
  • 1 bunch of flat-leaf parsley
  • 3 lemons
  • 4 tbsp olive oil
  • 2 tsp paprika powder, hot
  • 2 tsp salt
  • ½ tsp cumin powder
  • e.g. chili flakes or chili oil

Working time approx. 30 minutes; Total time approx. 30 minutes

Grind the walnuts into very small pieces or flour. Finely chop the onion and parsley leaves. Place the couscous in a mixing bowl, add the juice of the 3 lemons, and 100 ml of warm water. Now, with the mixer fitted with the dough hook, keep kneading and add all the other ingredients. Once the couscous has absorbed all the liquid, add a splash of warm water a little at a time until it is soft. It’s important to add the water in small sips, as the mixture shouldn’t be too wet in the end. Knead the couscous for at least 15 minutes. Once the couscous is soft and sticky, you can form it into balls.
