Ingredients for 4 servings:
- 1 onion(s), finely diced
- 1 garlic clove(s), finely diced
- 500 g sweet potato(s), thin slices
- 500 g carrot(s), thin slices
- 400 ml coconut milk, unsweetened
- 200 ml vegetable stock
- 2 tbsp curry powder
- 200 g couscous
- 2 tbsp sesame seeds, roasted without fat
- 1 tbsp oil
- salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Sauté the onion and garlic in oil. Add the carrots and sauté for 5 minutes. Season with salt and pepper and remove from the heat. Combine the coconut milk, vegetable stock, and curry powder. Sprinkle the couscous into a casserole dish. Spread the carrot mixture evenly over the couscous and top with sweet potato slices. Pour the curry sauce over the couscous and sprinkle with sesame seeds. Bake in a preheated oven at 200°C (top/bottom heat) for about 30 minutes.
