Ingredients for 4 servings:
- ½ onion(s), diced
- 500 g potato(s), sliced
- 500 g celeriac, sliced
- 300 g apples, sour, sliced
- 30 g flour (wholemeal flour)
- 400 ml soy milk (soy drink)
- nutmeg
- ½ tbsp ginger, grated
- 1 tbsp lemon juice
- 2 tbsp sunflower seeds, coarsely chopped
- salt and pepper

Sauté onions in oil, add celery, water if desired, and simmer covered for 10 minutes. Combine flour and milk, bring to a boil while stirring, and simmer for 2 minutes. Stir in nutmeg, salt, pepper, ginger, and lemon juice, and season to taste. Layer the potato, celery, and apple slices in a casserole dish, pour over the sauce, and sprinkle with sunflower seeds. Bake at 170°C (350°F) for 15 minutes, then uncovered for another 5-10 minutes.
